Honey Cornbread Muffins with Mixed Berry Jam

A couple of weeks ago, I was in the mood for some cornbread. I came across this recipe online and decided to give it a try.

Ingredients:
1 cup yellow corn meal
1 cup flour
1 tbsp baking powder
1/2 cup sugar
1 tsp salt
2 eggs
1 cup milk
1/2 stick butter
1/4 cup honey

Preheat oven to 400. Mix all the dry ingredients together. Beat eggs, milk, honey, sugar, and melted butter together. Add the dry ingredients. Pour into muffin tin lined with muffin cups. Bake for 15 minutes.

Yay! They're done!

They taste great alone, but I thought I'd try making some jam.

Ingredients:
water
mixed berries (blueberries, blackberries, raspberries)
sugar/honey or both

In a small saucepan, combine berries and enough water to cover berries about halfway. Allow to boil and then reduce heat to simmer. After about 10 minutes, the berries will be nice and soft. Add sugar to your liking and then simmer for maybe 5 to 6 minutes more until liquid reduces a bit. Allow to cool and then put in a food processor/blender. That's it!

Pour over your muffins and enjoy. =) It looks scary... but it's really yummy.
