Steve's Lucky Chicken

This is one of the first dishes I've ever learned how to cook. I think it's changed over the years but, oh well! It sounds funny to add ketchup, but trust me, it's super yummy! It has a sort of sweet taste, like sweet and sour chicken? But without the sourness. Andrew doesn't really care for ketchup but he LOVES this dish!

The story behind the dish is this: My sister's roommate had a little brother who played baseball. When he'd come back from practice, he'd be super hungry so his older sister would cook this for him and then demand his birthright in return. Oh wait, that was the story of Jacob and Esau. Yeah, I don't know the story. *shrugs* All I know is that my sister's roommate taught my sister how to make it, who taught me how to make it, and now I'm teaching YOU how to make it!

Ingredients: (makes 2 large servings)

1 large boneless skinless chicken breast (cubed)
about 1/4 cup flour
1 cup sliced mushrooms
1 small bell pepper (chopped into squares)
1 garlic clove (diced)
1/2 medium onion (chopped)
ketchup
salt and pepper
sesame oil

optional:
chinese (snow) peas

Before you cube your chicken, you need to pat it dry. Next, mix the flour with some salt and pepper. Dredge the cubed chicken in the flour mixture. Meanwhile, add some oil to a heated pan. When it gets nice and hot, add the chicken and let it cook until it gets brown and crispy. Remove the chicken and place it on a paper towel to drain some of the oil. You can add butter to the pan if you want to brown the chicken faster.

The next step, you can either clean the pan and add clean oil (which is what I do) or use the same pan. Cook the onions and bell pepper and when those start getting tender, add the mushrooms and garlic. Season with salt and pepper. Add the chicken and mix all together. Next, add ketchup and mix until all the ingredients are thoroughly covered. There's no such thing as too much!

At the end, add some sesame oil to taste. Serve next to, or on, a bed of rice. Hm, I don't imagine a bed of rice would be very comfortable to sleep on.

I forgot about this! I used to love to make it and add all kinds of veggies like mushrooms and Jason would eat it! ha ha!
