inspired by (but definitely not) the gorbals

if you watch top chef, then you know who chef ilan hall is. and if you're like me, then you don't. i got the chance to meet and learn all about chef ilan during a friend's birthday dinner at his restaurant, the gorbals. my friend was dying to meet him (to put it lightly) but when he came out, she had gone to the restroom. i had been gushing about the corn all night so i snatched the opportunity to ask him how he made it.

and now i'll share the recipe with you!

ingredients:

1-2 cloves of garlic (depending on the size)
1 shallot
1/2 stick of butter (you can probably use less than this)
corn on the cob
paprika (this is optional, depending on if you want a little spice in it)
salt
pepper
green onions

preheat the oven to 350 degrees. stick in your corn (with husks!) and roast for about 30-45 minutes.

this is not how your corn should look when it's done. it should actually have some browned spots. if you have a grill it'll probably work better.

meanwhile, combine the rest of the ingredients except the green onions in a food processor... and... process? scrape the mixture into a ziploc/saran wrap and freeze.

when the corn is done, remove the husks and, with a knife, cut off the kernels. take the frozen butter mixture and grate onto corn with cheese grater. add chopped green onions to garnish. mix it all up with a spoon and serve! (note* depending on how much corn you have, you'll probably have some butter mixture left over. just freeze it and use it again next time)

notice, i didn't add green onions.

the result? it definitely wasn't as good as it was at the gorbals. there were a couple of reasons: 1. i didn't roast the corn long enough 2. i didn't roast the corn on a grill 3. i don't have a food processor 4. i didn't have a cheese grater 5. i think he used a different type of butter and 6. i'm not a chef.

oven roasted broccoli with garlic and shallots

oven-fried chicken. it's amazing how yummy and crispy boneless skinless oven-fried chicken can be.

I LOVE LOVE LOVE corn. I can eat corn all day long. I'm definitely trying this out!
